沖芝正國は平安城沖芝という銘で広く知られる刀工の中でも名高い銘を受け継ぐ包丁です。刀作りの技術を持つ沖芝正國はそれと同じ製法の水本焼の包丁を世界で初めて完成させたことで、現存する品物は最高級として扱われています。

銘は平安城正国作と正國作が使われており、この包丁は正国作とくっきりと綺麗な刻印が打刻されております。

こちら新品の状態を京都で研磨師をされているenshiさんに全鏡面、刃紋出しをしていただきました。

沖芝正國はもう亡くなられておりますので包丁の絶対数が決まっております。
且つ、昔からそのほとんどがオーダーによるものなので値段も高く少数の生産だったそうです。
更にその中でも360mmは本当に数本しか無いのではないでしょうか

こうして完璧な新品状態で残っている包丁はほぼないと言って良いでしょう。
また海外の和包丁ブームで有名鍛冶師の本焼包丁はとても人気で高騰しております。
